Chestnut pancakes

Gluten free, lactose free, healthy, low fat, nutritious, plaleo pancakes made with chestnut flour

These light, fluffy pancakes are naturally gluten free and extremely nutritious thanks to the mixture of chestnut and teff flours in the batter. These flours are not only providing loads of minerals and vitamins but also give the pancakes a deep nutty flavour.

Ingredients (for 10 pancakes):

  • 100 g chestnut flour
  • 30 g teff flour
  • ¼ tsp bicarbonate of soda
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 tsp lemon juice
  • 60 ml coconut milk (canned)
  • 4 eggs
  • 1 tablespoon coconut oil
  • Berries and honey to serve

 

Shift all dry ingredients together and set aside. Mix coconut milk, eggs and lemon juice and whisk the flour mix in (use an immersion blender if you want to get rid of the lumps easily). Melt half of the coconut oil in a flat non-stick frying pan and bake pancakes of approximately 10 cm diameter adding more coconut oil to the pan id needed. Serve them warm, topped with fresh fruits and a drizzle of honey.
