Let`s start this year with a pure and refreshing green smoothie, which is rich with antioxidants, vitamins and minerals to refresh our body after the lazy holidays.
I`m planning to start my days with fresh smoothies at least a few days every week. Currently, I make overnight oats or some kind of a porridge almost every morning. This is a convenient routine, as I`m able to prepare ahead and it makes me content until lunchtime. However, I started getting lazy about adding the fruit (sometimes just using dried fruit or even leaving it out completely) and I feel like I need a bit more fruits and vegs in my mornings. Long story short, I will change up some of these morning porridges to delicious fruit and veggie filled smoothies!
It is a good idea to drink greens in the form of a smoothie, because it is a really quick and delicious breakfast option that is easy to take with you and drink in the car, on the train, in the gym, at work or even in the park (oh, I wish we were already there). It is filling and full of nutrients that have enormous health benefits. Of course you could just eat cucumber, kale, celery, banana and pear for breakfast and drink some lemony water with them, but honestly… No one has the patience and time for that in the morning. Finally, compared to eating a quick cereal or sandwich this is way more nutritious.
This smoothie serves two. It’s always a good idea to share a smoothie with your loved ones, but you can also just put half in a closed container and drink it tomorrow!
Ingredients (serves two):
- 2 celery stalks (chopped up)
- 1/3 cucumber (peeled and diced)
- 1 ripe pear (cored and diced)
- 1 banana (diced)
- Two handfuls of kale (one cup)
- 300 ml water
- 2 tablespoon fresh lemon juice
- 1 teaspoon honey (optional)
- Ice cubes
- Leek sprouts to decorate (optional)
Put all ingredients in a blender except for the ice cubes and honey, and blitz them until smooth. Taste it and if you think it has to be sweeter add the honey. Blitz a little longer to mix it in. If you will drink it straightaway you can serve it with the ice cubes in the glass or add the ice cubes in the blender and blitz once again until the ice is all chopped up. If you are preparing ahead pour each portion in a jar or water bottle and keep refrigerated until you need them. Whenever you’re ready for them just give them a good shake and you are good to go!
