Chicory salad with apples and mustard dressing

Let the crunchy fresh bites surprise you with the slight bitterness of the chicory balanced by the sweet and tangy apples and cranberries drizzled with a rich honey mustard dressing. This is a perfect salad for bigger dinners, it makes a good combination with roasted meat or even with mackerel pie

Sweet and tart chicory salad with apples and mustard dressing

Ingredients (serves 2)

  • A handful of walnuts
  • 1 green apple
  • 3 chicory
  • 1 teaspoon mustard
  • 1 teaspoon honey
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • A handful of dried cranberries
  • Feshly grated black pepper

In a dry pan toast walnuts in a few minutes then chop them coarsely and set aside.
Wash and quarter apples, remove seeds and chop them in bite sized thin slices. Wash chicory, halve and remove the stem then chop it in 1 cm thick slices. Set aside a few whole leaves for serving. For the dressing mix mustard, honey, olive oil and lemon juice with the pepper and then mix it with the chicory and apple. Serve it on the chicory leaves that you set aside earlier sprinkled with walnuts and cranberries.
