Fresh fruits are amazing, but when the weather is colder and you mostly crave something warm and comforting. This baked fruit salad is one simple way to eat more fruits in these times. It is sweet and sticky from the caramelized honey and baked fruits, a little crunchy from the sunflower seeds and fragrant from the mix of spices.
The best thing is that it needs almost no preparation (chopping the fruits) and it just bakes up while you are eating dinner. This recipe is the perfect example of that you don`t need complicated and fancy recipes to have a kickass healthy and delicious dessert.
The best thing is that you can play round with the fruits, you can use the fruits that you almost forgot about and even frozen berries.
Ingredients (for four portions)
- 1 apple
- 1 orange
- 3 plums
- 100 grams of redcurrants (can be frozen)
- 1 tablespoon honey
- 1 teaspoon cinnamon
- ½ teaspoon powdered ginger
- ½ teaspoon cloves
- 2 tablespoon sunflower seeds
- 500 grams of quark or Greek yoghurt
Preheat oven to 180 Celsius.
Halve apples, deseed, slice thinly and toss into a small ovenproof dish (about 26 centimetre if it`s round) Halve, pit, slice plums and tip into the oven dish as well. Halve the orange, slice the peel off from one of the halves. Slice the flesh and add it to the rest of the fruits with the redcurrants and sunflower seeds. Add the spices, honey and squeeze the other half of the orange in and mix it well until all of the fruits are covered with the spicy honey sauce.
Bake it in the oven for 20 minutes. Using two spoons mix it around so that it doesn`t start burning. Bake it until the fruits are soft and start caramelizing, check it a few times and mix a few times so that the fruits are covered with the juices. It should be done in 30-40 minutes depending on your oven and the ripeness of the fruits.
Prepare 4 small bowls for serving. Place a dollop of quark or Greek yoghurt in each of them and top it with a generous amount of fruits and sauce. Enjoy while it`s warm.
