Potato salad with celery

If you are ever having troubles with what to bring to a BBQ or a picnic in the Netherlands there is one tip I would give you: you can never go wrong with a potato dish. Of all the endless options potato salad is one great way to treat your friends: it is easy to bring, ready to eat, and (most importantly) is absolutely delicious. There are a thousand ways to make it, but this is my favourite version because the yoghurt makes it light and refreshing, and the celery crunchy and nutritious.Light potato salad with yoghurt sauce and celeryIngredients (for 10 portions):

  • 1 kg small potatoes washed and scrubbed
  • 300 ml yoghurt
  • 4 tsp mayonnaise
  • 1 tsp Dijon mustard
  • 1/2 onion
  • 1/2 bunch of parsley
  • 1/2 bunch of chives
  • 4 celery stalks
  • salt, pepper

Cook the potatoes ready in 10 minutes. Rinse and let them cool a bit. Finely chop up onion, parsley, chives and put them in a big bowl. Cut celery stalks in half in length and slice thinly (about 2mm thick) Add celery to the bowl and mix in yoghurt, mayonnaise and mustard. Slice up cooled potatoesand add to the bowl (if they are still warm they would make your yoghurt sour and maybe even shift it).  Mix carefully, so that you don’t mush the potatoes and season to taste with salt and pepper. Add more yoghurt if you want it juicier or mayonnaise if you feel like having it heavier.
