I love to wake up on a lazy Sunday morning, and make this easy and filling breakfast. It is full of vegetables, low on carbs and fat so even though it is comforting it does not make your stomach heavy. You can quickly get it on the table and it will make you ready for the day.
It is best served with a cold fruity yoghurt smoothie!
Ingredients (makes 2 servings)
- 1 tbsp olive oil
- 2 onions (sliced)
- 2 handful of peas (frozen or fresh)
- 1/2 red bell pepper or any sweet pepper (sliced)
- 5 eggs
- 1 tomato (sliced)
- 100g cheese (grated)
- fresh basil leaves
- salt and pepper
Heat up the olive oil in a non stick skillet, braise the onions, add the peas and the pepper and put it on low fire. Break the eggs on top, spread the tomatoes and cheese on top and fry it until the egg white is cooked. I like to break the yolks and spread them a little, making it something in between fried and scrambled eggs.
You can make many variations of this. For example you can change the peas to two handful of spinach or cooked broccoli, change the young cheese to mozzarella or goat cheese and sprinkle the top with fresh parsley or thyme. Good luck with experimenting!
