Waldorf salad

This is one of my favourite salads, because you can have a refreshing, light salad with only using food from your pantry and it is on the table in 10 minutes.

Sweet and crunchy waldorf salad

The tastes are perfectly balanced with sweetness of the apple and raisins, the spiciness of the mustard and the crunchy roasted walnuts. You can make it a light lunch or part of your dinner, makes a good match with white fish or chicken. Because of the yoghurt dressing and the sweet bites is quite filling, and packed with nutrients.

Waldorf salad with a sweet bite and crunch

Ingredients (makes 3 servings)

  • 1/2 apple
  • 1 lemon (squeezed)
  • 1/2 celery (500g)
  • 150 ml yoghurt
  • 1 tbsp mayo
  • 1 tsp mustard (dijon)
  • white pepper
  • 1/4 tsp freshly grated nutmeg
  • 60g walnuts
  • 1 tbsp raisins

Grate the apple (with the peel) and the peeled celery, sprinkle with the lemon juice and season with pepper and nutmeg. Mix the yoghurt with the mayo and mustard in a bowl. Roast the walnuts in a skillet and chop them roughly. Combine the apple-celery mix with the sauce, walnuts and raisins.

You can keep some of the walnuts to sprinkle with when serving. You can keep this salad in a closed food container in your fridge for 2 days.
